Coconut Pie

1/4 c. softened butter
1 c. sugar
2 eggs
2 tbs. flour
1/2 c. milk
1 tsp. vanilla
2 c. grated coconut
1 9" unbaked pie shell
Preheat oven to 350F.
In a large bowl, mix butter and sugar until light.
One at a time, beat in eggs.
Add flour and blend until smooth.
Mix in milk, vanilla and grated coconut;
spoon into pie crust.
Bake in preheated oven until lightly browned
and springy to the touch, about 45 min.
Makes 8 servings.
