Colorful Corn Salad


2 pkg. (10 oz each) frozen corn, thawed
2 c. diced green pepper
2 c. diced sweet red pepper
2 c. diced celery
1 c. minced fresh parsley
1 c. chopped green onion
1/2 c. shredded Parmesan cheese
2 tsp. ground cumin
1 1/2 tsp. salt
3/4 tsp. pepper
1/2 tsp. hot pepper sauce
1/8 tsp. cayenne pepper
3 tbs. olive or vegetable oil (I used olive)
2 garlic cloves, minced (I used about 1 tbs.+)
6 tbs. lime juice

In large bowl, combine first 12 ingredients.
In microwave safe dish, combine oil and garlic.
Microwave, uncovered, on high for 1 min. (I cut this about 15 sec. short in mine).
Cool. Whisk in lime j uice.
Pour over the corn mixture and toss to coat.
Cover, and refrigerate until serving.
Yield: 16-18 servings.
