Luscious Cornmeal Bars


1 1/2 c. chopped onion
3 tbs. butter
1 c. cornmeal
1 c. all purpose flour
1 c. chopped cooked ham or beef
2 tbs. parsley flakes
3 tsp. baking powder
1 tsp. salt
1/3 c. butter
1 egg, beaten
1 c. milk
1 c. shredded sharp Cheddar cheese

Saute onion in 3 tbs. butter until tender; set aside.
Combine cornmeal, flour, ham, parsley,
baking powder, salt and 2 tbs. sauteed onion
in a mixing bowl. Cut in 1/3 c. butter until
mixture is crumbly; add egg and milk,
stirring just until moistened.

Spread batter evenly in a well-greased
8x8x2" baking dish. Sprinkle remaining
sauteed onion over batter; top with cheese.
Bake at 425F for 20 min. or until golden brown.
Cut into bars. Yield: about 1 doz.
