Cottage Cheese Pancakes


In a bowl, combine well 1 c. cottage cheese, 4 eggs, lightly beaten,
1/2 c. flour,3/4 stick butter, melted and a pinch of salt.
Heat a griddle over moderately high heat until it is hot and
brush it with clarified butter. Ladle some of the batter (about 2 tbs.)
onto the griddle to form pancakes about 2 1/2" in diameter
and cook the pancakes for 2-3 min., or until
the undersides are lightly browned.
Turn the pancakes and brown the other sides.
Transfer the pancakes to a heated platter.
Continue to make pancakes with the remaining batter
in the same manner. Makes about 12 pancakes.
