Country Waffles


2 cups baking mix
1 egg
1/2 cup oil
1 1/2 cups club soda

In a large bowl combine all of the ingredients.
Pour the batter on to a waffle iron and bake until golden.
Use all the batter.
Wrap left over waffles in plastic and freeze.
Toast the frozen waffles in the toaster as needed.
Serves 8 to 10

Note: The club soda doesn't permit the batter to be stored.
