Cranberry Waffles

1 3/4 c. sifted flour
1/4 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
2 egg yolks, beaten
1 1/4 c. milk
2 tbs. cooking oil
1 c. cranberries, chopped
2 egg whites, stiffly beaten

CIDER SAUCE: 1 c. brown sugar
1 c. cider
1 tbs. butter
1/2 tsp. lemon juice
1/4 tsp. cinnamon
dash ground nutmeg

Sift together flour, sugar, salt and baking powder.
Combine egg yolks, milk and oil.
Add to the dry mixture and mix well.
Stir in the cranberries.
Fold in egg whites and bake in a hot waffle maker.
Serve with cider sauce.
Sauce: Mix the brown sugar, cider, butter, lemon juice and spices.
Bring to a boil.
Cook 30 min.
Makes 1 cup.

NOTE: try substituting cranberry juice for the cider.
Or adding a dash of ground anise to the spices.
