Creamy Vidalia Dressing


1/2 c. EACH: chopped Vidalia onion,
plain nonfat yogurt
1/4 c. chopped parsley
1 tsp. dried oregano OR other favorite herb
1 clove garlic
1/2 tsp. freshly ground pepper
3 tbs. white-wine vinegar
2 tbs. nonfat mayonnaise

In jar or blender or work bowl of
food processor fitted with steel blade,
process onion, yogurt, parsley, oregano,
garlic, pepper, vinegar and
mayonnaise until thoroughly blended.
Transfer to small bowl, cover and
chill thoroughly before serving.
Serve with green salads.
