Creole Omelet Filling


Heat 2 tbs. butter in heavy skillet;
add 1 medium onion, finely chopped,
1 med. green pepper, finely chopped,
1/4 c. chopped pimiento, and
1 clove garlic, minced; saute' until
onions and peppers are tender;
add 1 c. tomato sauce with tomato pieces
and 1/4 tsp. hot sauce; cook over
medium heat until mixture begins to thicken.
Yield: Filling for 4 omelets.
