Cucumbers Vinaigrette


2 med. cucumbers, cut into
1/4" thick slices
2 tsp. salt
1/2 c. salad oil
2 tbs. cider vinegar
1 tbs. sweet pickle relish
1 tbs. chopped parsley
1/4 tsp. sugar

25 min. before: In med. bowl, combine
cucumber slices with 1 tsp. salt; refrigerate.
In covered blender container at medium speed,
blend remaining salt and remaining ingredients
for 1 min. Refrigerate.

To serve: Drain cucumber slices;
toss lightly with sauce. Makes 4.
