Cymling Cakes

1 large cymling
1 med. Vidalia onion, grated
1 egg, beaten
1/2 tsp. salt
1 tbs. sugar
1 c. flour
1 1/2 tsp. baking powder
1/4 tsp. pepper
olive oil for frying
butter for frying
Grate squash, using coarse side of grater.
In medium-sized mixing bowl,
place grated cymling and onions and
add all ingredients except oil.
Mix until thoroughly incorporated.
Shape mixture into 8 patties.
Pour about 2 tbs. oil/butter
(1 tbs. each) into skillet and fry patties
on both sides over medium-high heat
until cooked through the centers.
Serves 4.
