Date and Maple Scones


nonstick cooking spray
2 c. flour
1/4 c. firmly packed brown sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. Salt
1/3 c. chilled stick margarine,
cut into small pieces
1/2 c. EACH: chopped pitted dates,
1% lowfat milk
3 tbs. maple syrup

Preheat oven to 400F.
Coat a baking sheet with nonstick cooking spray.
In a medium bowl, combine flour, sugar,
baking powder, baking soda and salt;
cut in margarine with a pastry blender
until mixture resembles coarse meal.
Add dates; toss well. Combine milk and syrup.
Add to flour mixture, stirring just until moist.

Turn dough onto a lightly floured surface;
knead 4-5 times. Pat dough into a 8" circle on
prepared baking sheet. Cut dough into 12 wedges,
cutting into, but not through, dough.

Bake in preheated oven until golden,
about 15 min. Serve warm. Makes 12.
