Deidre's Brown Sugar Caramel Glaze


3 tbs. butter
3 tbs. packed brown sugar
3 tbs. granulated sugar
3 tbs. heavy cream
1/2 tsp. vanilla extract

Place butter, sugars and cream in
medium-sized saucepan over medium heat.
Bring the mixture to a rolling boil, stirring.
Let boil for 1 min. longer, stirring.
Remove from the heat and add the extract.
Spoon or spread the warm glaze over the cake of your choice.

Makes 1/2 c. enough to glaze the top of a
12-cup Bundt cake or a 9x13" cake.
The longer you boil the glaze, the stiffer the glaze will become.
Work quickly as this starts to set up quickly.

Variation: substitute coffee extract for the vanilla.
