Dirty Rice

1/2 lb. EACH: chopped chicken livers,
bulk pork sausage 1/3 c. margarine 1 c. chopped onion 1/2 c. chopped celery 1 bunch green onions, chopped 2 tbs. chopped fresh parsley 1 clove garlic, minced 1/2 tsp. EACH: dried thyme, dried basil, pepper 1/4 tsp. hot sauce 3 c. cooked long-grain rice 1 (10 3/4 oz) can condensed chicken broth, undiluted In a skillet, saute livers and sausage until browned. Remove, drain and set aside. In skillet, melt margarine. Add onion, celery, green onions, parsley and garlic. Saute until tender. Add browned meats, thyme, basil, pepper, hot sauce, rice and broth. Mix well. Stirring constantly, cook over med. heat until thoroughly heated. Makes 8 servings. |
