Eggnog Quick Bread


2 eggs
1 cup dairy eggnog (not canned)
2 teaspoons rum extract
2 1/4 cups all-purpose flour
1/2 teaspoon salt
1 cup white sugar
1/2 cup butter or margarine
1 tsp vanilla extract
2 tsp baking powder
1/4 tsp ground nutmeg

Preheat oven to 350F.
Grease bottom only of 9x5 inch loaf pan.
Beat eggs in large bowl.
Add sugar, eggnog, butter, rum extract and vanilla; blend well.
Lightly spoon flour into measuring cup, level off.
Add flour, baking powder, salt and nutmeg,
stirring just until dry ingredients are moistened.

Pour into greased pan.
Bake for 40 minutes to 1 hour
or until cake tester inserted in center comes out clean.
Cool 10 min. Remove from pan.
Cool completely.
Wrap tightly and store in the refrigerator.
Makes 1 - 9 x 5 inch loaf.
