Grandma's Famous Eggplant Parmesan


1 large eggplant
1 cup breadcrumbs
16 ounce jar of marinara sauce
16 ounce mozzarella cheese sliced

Mix water and salt into a medium size bowl.
Peel and slice eggplant into ½"inch thick round pieces,
soak in salt water for 30 min.

Preheat oven to 350F.
Remove eggplant from salt water and coat with
bread crumbs, place in a 13x9" baking pan.
Pour marinara sauce over eggplant
and top with mozzarella cheese.
Bake for 20-30 or until eggplant is tender
and cheese is melted. Serves: 4
