Eggplant Cakes


1 eggplant
1 egg, slightly beaten
2-3 tbs. flour
1 tbs. sugar
salt and pepper to taste
Peel and dice eggplant. Boil until tender.
Drain and mash with other ingredients.
Shape into small cakes and fry in deep fat.
Serves 4-6.

Do ahead and put into aluminum pan to keep warm.
