Eggplant Sandwich


1 eggplant, cut into 12 rounds a little more than 1/4" thick
6 hamburger patties
1 jar spaghetti sauce or
3 to 3 1/2 cups homemade or 1 6 oz can tomato sauce
with 1 teaspoon spaghetti seasoning stirred into it
6 slices mozzarella cheese Put about 3/4 cups spaghetti sauce in a flat pan.
Put down 6 slices eggplant.
Top each eggplant slice with a hamburger patty
and another eggplant slice.
Pour remaining spaghetti sauce over eggplant.
If top slice of eggplant is not covered, add enough water
(or can of tomato sauce) so top slice of eggplant is covered.
Cover pan tightly with foil.
Bake at 350° for 1 hour or until meat is done and hamburger is tender.
Remove foil, put a slice of mozzarella cheese on top of each eggplant
slice and put in broiler for 3 to 4 minutes
or until cheese begins to melt and bubble.
