Baked Eggs with White Sauce


4 large eggs
1 cup grated swiss cheese, divided
4 tbsp butter
1 tbsp flour
1 cup milk
2 tbsp cream
salt, pepper, and ground nutmeg
1 egg yolk
Cook the eggs in boiling water,
until hard boiled, about 6-8 minutes.
Shell, then slice in half.
Melt half of the butter in
a pan over medium heat.
Add the flour and let it cook
for about 2 minutes.
Add the milk and bring to a boil.
Add the cream, then season with
salt, pepper, and nutmeg.
Let it gently simmer and reduce for
about 7 minutes, until it thickens.
Turn off the heat. Add half of the
grated cheese and egg yolk. Mix well.
Place the halved boiled eggs
in small baking dishes,
then pour the sauce over the eggs.
Top with the rest of the grated cheese,
then broil in a 425° using top heat
until the cheese melts
and the sauce becomes bubbly.
Serve with toast and salad.
