Fluffy Potatoes


1/4 c. butter
1/2 c. peeled and coarsely chopped onion
3/4 c. warm milk
1/2 c. pasteurized process-cheese spread
6 med.-sized potatoes, pared, quartered, cooked and drained
3/4 tsp. Salt
1/4 tsp. Pepper

In small saucepan over moderate heat, melt butter.
Add onion and cook until lightly browned; set aside.
While potatoes are still hot, whip them in large bowl
of electric mixer, adding milk gradually.
Continue to whip, adding butter-onion mixture,
cheese, salt and pepper. Whip until potatoes are fluffy.
Serves 6.
