Garlic Custards

10 garlic cloves, medium to large,
peeled and halved
1/2 c. chopped onion
1 tbs. olive oil
1/2 c. plus 2 tbs. milk
2 large eggs
1 c. whipping cream
1/2 tsp. dried thyme
Preheat oven to 325F.
In a medium saucepan, place garlic.
Add enough water just to cover and bring to a boil.
Cook about 2 min.
Remove from heat and drain well.
In another pan, saute' onion in oil until translucent.
In blender jar or food processor, puree garlic
with milk until smooth. Whisk in eggs, cream,
thyme and onion. Divide among 6 custard cups.
Place in large baking pan. Add water to pan
to come about halfway up the sides of the cups.
Bake in preheated oven until custard is set.
Serve warm. Makes 6 servings.
