Chef Gibbs' Salad Dressing


3 tbs. red wine
1 (16 oz) can diced tomatoes
3 tbs. olive oil
6 tbs. vegetable oil
3 sprigs parsley, minced
5 medium garlic cloves, minced
1 green onion, sliced
1/4 c. chopped sun-dried tomatoes
3 tbs. Parmesan cheese
1/3 tsp. sugar
1 1/2 tsp. basil
1/3 tsp. EACH: salt, pepper

In a large bowl, combine red wine, diced tomatoes,
olive oil, vegetable oil, parsley, garlic, onion,
sun-dried tomatoes, Parmesan cheese, sugar,
basil, salt and pepper. Mix well.
Refrigerate before serving.
Makes 4-6 servings.
