Gingerbread Waffles with Lemon Sauce


1/4 c. butter
1 c. sugar
2 eggs
1/2 c. molasses
1 c. hot water
2 Tablespoons baking soda
2-1/2 c. flour
1/4 t. cloves
1/4 t. cinnamon
2 t. ginger
Lemon Sauce

Mix butter and sugar with beaten eggs. Add molasses and water.
Sift soda, flour, cloves, cinnamon and ginger together; mix well.
Preheat waffle iron. Pour in batter and bake until lightly brown, about 2-3 minutes.
Makes 8-10. Serve with warm Lemon Sauce.

LEMON SAUCE:
1 c. sugar
2 T. cornstarch
2 c. boiling water
2 T. butter
Juice and grated rind of 1 lemon
Mix sugar and cornstarch in saucepan.
Gradually stir in boiling water.
Cook, stirring constantly, until thickened.
Remove from heat and stir in butter, lemon juice and rind.
Serve warm. Makes about 2-3/4 cups.
