Sharon Morley's Ginger Pancakes
with Lemon Sauce



Pancakes:
your favorite pancake batter recipe for 4 servings
1 1/2 tsp. ground ginger
1 tsp. ground cinnamon
1/2 tsp. ground cloves

Lemon Sauce:
1/2 c. butter
1 egg, beaten
3 tbs. lemon juice
1 c. sugar
1/4 c. water
grated peel of 1 lemon

Prepare pancake batter according to recipe directions.
Mix in ginger, cinnamon and cloves.
Cook as directed in batter recipe.
Serve with lemon sauce.

Batter can be prepared the night before; doubles easily.
In saucepan, heat butter, egg, lemon juice, sugar, water
and lemon peel together, stirring constantly,
over medium heat until boiling. Makes 4 servings.
