Grits Souffle


4 tbs. butter
2 eggs (beaten)
2 c. medium sharp cheese (grated)
2 c. hot cooked grits
2/3 c. milk

Beat butter and cheese into hot grits.
Add milk to well-beaten eggs and stir into grits.
Pour into a souffle dish or casserole.

Sprinkle a little grated cheese on top.
Set in pan of hot water,
about 1" deep.
Bake at 375F, 1 hour.
Serves 6.
