Green Tomato Pickles


2 lb. Cucumbers, pared and sliced
1 ½ lb. Green tomatoes, cored and thinly sliced
1 ½ lb. Onions, sliced
4 green peppers, chopped
1 red pepper, chopped
3 c. sugar
3 c. white vinegar
1 tbs. EACH: salt, celery seeds, mustard seeds

Wash and prepare vegetables. Combine vinegar, sugar,
salt, celery seeds and mustard seeds; bring to boil.
Add vegetables; simmer for 10 min.
Continue simmering while quickly packing 1 hot,
sterilized jar at a time. Fill to within 1/8" of top.
Be sure vinegar solution covers vegetables.
Seal each jar immediately. Yield: 4-5 pints.
