Ham Souffles


1 1/2 c. ground or cooked ham
1/2 lb. sharp process American cheese
1 small green pepper, ground
1 small onion, grated
1 c. milk
2 beaten egg yolks
1/2 c. cracker crumbs
2 stiffly beaten egg whites
1 recipe Mushroom Sauce

Combine first four ingredients.
Stir in milk, egg yolks, and crumbs.
Fold in beaten egg whites.
Fill 6 greased (6 oz) custard cups and
bake in 350F oven for 40-50 min.
Serves 6.

Mushroom Sauce:
2 tbs. EACH: butter, flour
1 c. milk
1 (2 oz) can mushrooms
1 tbs. grated onion
salt and pepper to taste

Melt 2 tbs. butter. Blend in 2 tbs. flour.
Gradually stir in 1 c. milk and
sliced mushrooms with liquid.
Cook, stirring constantly, until thick.
Add 1 tbs. grated onion. Season to taste.
Makes 6 servings. Serve over ham souffles.
