Hazelnut Butter Cookies


2 c. all purpose flour
1/4 tsp. baking powder
1 pinch salt
1 c. unsalted butter, at room temperature
1 c. hazelnuts, toasted,
husked, coarsely ground
1/2 c. sugar
1 egg yolk
2 1/2 tsp. vanilla extract
2 c. powdered sugar
Position rack in center of oven and preheat to 350F.
Combine flour, baking soda and salt in large bowl.
Add butter and cut in until mixture resembles coarse meal.
Add nuts, 1/2 cup sugar, egg yolk and vanilla
and mix until smooth dough forms.
Shape dough into 1" balls.
Place on heavy large cookie sheets, spacing evenly.
Press balls with back of fork in crisscross pattern
to form ¼" thick cookies.

Bake cookies until tops begin to color and
bottoms are pale golden brown, about 20 minutes.
Spread 1 cup powdered sugar in large shallow dish.
Transfer cookies to dish.
Spoon remaining powdered sugar over cookies in dish.
(Can be prepared 1 week ahead.
Store cookies in airtight container.

Reroll in more sugar before serving if desired.)
