Homemade Dijon-Style Mustard

2 c. dry white wine or leftover flat champagne
1 c. chopped onion
2 cloves garlic, minced
1 1/4 c. dry mustard (about 4 oz)
2 tbs. honey
1 tbs. vegetable oil
2 tsp. salt
3 dashes bottled liquid hot red pepper sauce
Combine wine, onion and garlic
in a 4-cup glass measure.
Microwave on HIGH until boiling, 4-5 min.
Let mixture cool to bring out the
maximum flavor. Strain mixture into a bowl.
Put dry mustard into same 4-cup glass measure;
add strained liquid and blend with a wire whisk.
Blend in honey, oil, salt and pepper sauce.
Microwave on HIGH until boiling, about 4 min.;
stir with whisk.
Stirring with whisk midway through cooking,
microwave on HIGH 5 min.
Pour into glass jars; chill at leasst 2 days
to blend flavors. Makes 2 cups.
