Horseradish Beef Open-Face Sandwiches


2 beaten egg yolks
2 tbs. vinegar
2 tbs. freshly grated horseradish
1 tbs. sugar
1 tbs. prepared mustard
1 tbs. water
1/2 c. whipping cream
1/2 tsp. salt
rye bread
lettuce
chilled beef, sliced

In medium saucepan, combine egg yolks, vinegar, horseradish, sugar, mustard,
water and salt; mix well.
Place over low heat; cook and stir till thickened, about 2 min.
Remove from heat.
Stir till sauce is smooth; chill.
Whip cream; fold into horseradish mixture.
Refrigerate till serving time.
Assemble sandwiches of buttered rye bread, lettuce and chilled roast beef.
Top with horseradish sauce. 1/3 c. sauce.
