Janeway Chutney


1 lemon seeded and chopped
6 c. apples, diced, unpeeled
2 1/4 c. brown sugar
1 1/2 c. white raisins
4 oz. crystallized ginger, chopped
1 1/2 tsp. salt
1/4 tsp. crushed red pepper
1 clove garlic (small)
2 c. cider vinegar

Combine all ingredients.
Simmer until tender (about 1 hr. 15 min),
stirring frequently.
Remove from heat and ladle into hot jars.
Seal and process 10 min. in boiling water bath.
Kieffer pears may be mixed with apples.
Makes about 4 pints.
Serve with Janeway cheese boat.
