Julie's Chicken and Rice Casserole


1 c. Uncle Ben's rice
1 green pepper, chopped
1 stick margarine
1 c. pimiento, chopped
1 can cream of mushroom soup

Coat rice in melted butter.
Add pepper, pimiento, undiluted soup and sufficient broth
to keep from being dry {i usually add quite a bit}.
Spread in flat casserole dish.
Put chicken on top, skin side down.
Cook 30 min., 325°.
Turn chicken, skin side up.
Cook 40-50 min. Put under broiler if deeper brown desired.
