King Ranch Casserole


4 c. diced chicken
12 flour fresh tortillas
1 can cream mushroom soup
1 can cream chicken soup
1 green pepper, chopped
1 c. onion, chopped
1 tbs. chili powder
1/2 c. chicken stock
1 lb. Cheddar cheese, grated
1 can Ro-Tel tomatoes/pepper

Cut tortillas in strips; line bottom and sides of
3 quart 9x12" well oiled casserole dish with strips.
Sprinkle with chicken stock. Combine soups,
onion, green pepper, and chili powder.
Pour 1/2 over tortillas; layer 1/2 chicken,
1/2 cheese over tortillas. Make a second layer
of tortillas and repeat layering.
Top last layer with cheese and can
of Ro-Tel tomatoes, combined.
Bake at 350F for 3/4-1 hour.
