Kentucky Slaw


Kentucky Coleslaw 2 med. heads cabbage, shredded
3 large carrots, grated
1 large green pepper, chopped
3 c. sugar
1 1/2 c. vinegar
1 1/2 tsp. EACH: salt, mustard seeds
1 1/2 tbs. celery seeds

Combine cabbage, carrot and green pepper
in a large bowl; set aside.
Combine sugar, vinegar and salt in a
large saucean; bring to a boil,
and cook 2-3 min. Cool.
Stir seeds into vinegar mixture;
pour over vegetables, stirring well.
Cover; refrigerate 24 hours.
Yield: about 5 quarts.
