Lobster Salad


2 c. cooked lobster meat cut into bite-size pieces
or 2 (5 oz) c. lobster, drained and flaked
2 tbs. Lemon juice
½ c. chopped celery
¼ tsp. Prepared horseradish
1 tsp. Very finely chopped peeled onion
2 tbs. Slivered ripe olives
1/3 c. mayonnaise
¼ tsp. Salt
dash of Tobasco

In bowl, mix together lobster and lemon juice;
cover and chill about 1 hour, stirring occasionally.
Add celery, onion and olives.
Blend together mayonnaise, salt, horseradish and Tobasco.
Stir into lobster mixture. Serve on crisp salad greens.
Serves 4.
