Last Supper Meatloaf


2 large onions, sliced
olive oil for sauteeing
salt and pepper to taste
1 lb. ground beef
1 egg, lightly beaten
1 onion, minced
3 large cloves garlic, peeled and minced
1 large shallot, peeled and minced
1/4 c. low fat milk
1/2 c. rolled oats
3 tbs. dry breadcrumbs
1/4 c. ketchup
1/2 tsp. thyme
salt and freshly ground pepper to taste

Saute onions in olive oil until golden brown.
Season with salt and pepper.
Set aside.

Preheat oven to 350F.
In a bowl, mix remaining ingredients together.
Form into four oval patties,
about 1-1 1/2" nonstick oven-proof fry pan,
about 2-3 min. on each side.
Place pan in preheated oven.
Bake 30-35 min. or until cooked through.
Lift patties out of pan with a slotted spatula.
Top with sauteed onions and serve.
Makes 4 individual meatloaves.
