Mandarin Orange Muffins


2 3/4 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
3/4 c. light brown sugar
3/4 c. sugar
3/4 c. mandarin oranges, whole or chopped
1 1/2 sticks butter, melted
3/4 c. buttermilk
1 tbs. vanilla
3/4 tsp. lemon extract
3/4 tsp. orange extract
2 large eggs
3/4 c. dried sweetened cranberries
2 tbs. sugar for sprinkling

Mix dry ingredients.
Mix wet and ingredients and add to dry, and fold in with spatula.
Fold in fruit. Add to tins (greased).
Sprinkle with sugar.
Bake at 375°, 20-25 min.

NOTE: I use texas-sized muffin tins.
This makes 6, and I have enough batter leftover for two muffins.
It freezes beautifully.
