Mango Slaw


Slaw:
2 1/2 c. EACH: shredded red cabbage,
shredded white cabbage
1/2 red bell pepper, chopped
1/2 c. shredded carrots
1 1/2 c. chopped celery
1 small red onion, diced
2 c. chopped mango, drained
1 c. fine-chopped ham OR cooked,
peeled and deveined shrimp, optional

Dressing:
1/2 tsp. caraway seeds
2 tbs. red hamburger relish
1/4 c. EACH: mayonnaise OR to taste; plain yogurt

Slaw:
In a large nonreactive bowl, combine red and white cabbage,
bell pepper, carrots, celery, onion, mango and ham.

Dressing:
In a small bowl, combine caraway seeds, relish,
mayonnaise and yogurt; add to slaw.
Toss to combine. Chill until ready to serve.
Makes 12 servings.
