Mango Waldorf Salad


2 mangos, peeled, pitted and fresh cubed
1 c. green seedless grapes, each grape cut in half
3/4 c. chopped red onions
1/2 c. chopped celery
1/4 c. blue cheese, at room temperature
1/2 c. mayonnaise

In a large bowl, combine mangos, grapes, onions and celery.
In a small bowl, use a fork to mash blue cheese
into mayonnaise to desired consistency.
Fold into mango mixture.
Refrigerate until ready to serve but,
to bring out the flavor of the blue cheese,
serve at room temperature.
