Marinated Baby Carrots


1 lb baby carrots
2 bay leaves
1/2 c vinegar
1/4 c water
3 tbsp sugar
1/2 tsp salt
1/2 tsp mustard seed
1/2 tsp dill weed
1/4 crushed red pepper
1/4 tsp dill seed
1 clove minced garlic

Steam carrots until just tender and immediately immerse in cold water.
Pack carrots in a jar. Tuck in bay leaves.
Mix together other ingredients until sugar is dissolved.
Pour over carrots.
Cover and refrigerate at least 2 days or up to 3 weeks.
