Mocha Pudding


2 c. milk
1/2 tsp. salt
1/3 c. cream of rice
1 tsp. instant coffee
1/2 tsp. vanilla
2 sq. (1 oz) unsweetened
chocolate, melted
1 c. dark brown sugar

Combine milk and salt; scald.
Slowly add cream of rice and cook,
stirring constantly, for 1 min.
Remove from heat, cover,
let stand 4 min.
Pour into individual dishes
or 1-qt. serving dish.
Chill. 6-8 servings.
