Mock Apple Pie


2 Pie Crusts
40 Ritz Crackers (Saltines will work)
2 tsp Cream of Tartar
2 Cup Sugar
2 Tablespoons Lemon Juice
2 Tablespoons Lemon Zest (grated rind)
2 Tablespoons Butter
2 Cup Apple Cider
1 teaspoon Cinnamon
1/8 teaspoon Allspice

In sauce pan, combine Cream of Tartar, Sugar, Lemon Juice,
Lemon Zest, Apple Cider, Cinnamon, & Allspice, heat until syrupy.
Break crackers into pie shell in large pieces
Pour syrup over the top of the crackers.
Dot with butter, cover with second pie crust, vent,
put pie on cookie sheet and bake in a 375° oven for 1/2 Hr
or until browned. Let cool and then serve warm for best effect.
