Mousse au Chocolat


Day Before or Early in Day:
In double boiler, over hot, not boiling, water, melt
1/3-1/2 c. semisweet chocolate pieces with 1 tbs. water,
stirring until smooth. Remove from heat and add 3 egg yolks,
one at time, beating well after each addition.
In medium bowl, with electric mixer at high speed,
Beat 3 egg whites until stiff; gently fold into chocolate mixture.
Spoon mixture lightly into 4 sherbert glasses; refrigerate. 4 servings.
