Neiman-Marcus Chili


¼ c. shortening
2 lb. Beef round, shaved or ground
1 lb. Pork, cur into small cubes
1 onion, diced fine
2 cloves garlic, chopped fine
3 tbs. chili powder
1 tbs. flour
1 can (29 oz) tomatoes
1 tsp. EACH: oregano, salt
2 bay leaves, crumbled
2 tsp. Cumin seed
½ tsp. Coriander
1 sq. (1 oz) unsweetened chocolate

Melt shortening in a large skillet.
Brown beef, pork, onion and garlic until onion is soft.
Combine chili powder and flour;
add to meat mixture. Press the tomatoes
through a fine sieve twice; add to mixture.
Add oregano, salt, bay leaves, cumin seed and
coriander. Simmer slowly for about 2 hours.
Add chocolate during the last hour.
Serve with Spanish rice or tamales.
Garnish with olives.
Makes 1 quart.
