OLD TIME PEACH COBBLER


3 c. peaches
3 tbsp. cornstarch
3 c. sugar
3 c. water
2 c. flour
1/2 c. Crisco
1/4 c. sugar
1 tsp. salt

Mix cornstarch with 3 cups sugar,
add 3 cups water, bring to a boil
and let boil for 1minute. Add fruit.
Remove from heat.
Mix flour, Crisco, sugar and salt.
Add just enough cold water to form ball.
Roll dough on floured board about 1/8' thickness.
Cut into strips.
Place 1/2 of fruit in baking dish top
with 1/2 pastry strips; repeat,
sprinkle with sugar, dot with butter.
Bake at 400F until top is brown.
