Open Face Reuben Sandwich


1 (12 oz.) can corned beef
1 (16 oz) jar sauerkraut, well drained
1/2 c. commercial Thousand Island salad dressing
1/2 tsp. pepper
1 tbs. bacon bits
8 slices rye bread, toasted
8 (3/4 oz.) slices Swiss Cheese

Break up corned beef with a fork until crumbly.
Add sauerkraut and next 3 ingredients, stirring well.
Spread mixture on 8 slices of toast.
Bake at 350° for 10 min.
Cut each slice of Swiss cheese in half.
Place 2 strips on top of each sandwich;
bake 5 additional minutes or until cheese melts.
Yield: 4-6 servings.
