Orange Blueberry Muffins


1 15.1 oz. pkg. low fat blueberry muffin mix
3/4 c. water
1 tsp. grated orange peel
1/4 c. egg subtitute
1 tbs. sugar
1/4 tsp. ground cinnamon

Preheat oven to 400F.
Line muffin tin with paper baking cups or spray with nonstick vegetable coating.
Drain and rinse blueberries from muffin mix; set aside
In medium bowl, stir together muffin mix, water, orange peel
and egg substitute until just moistened; fold in blueberries.
Fill muffin cups two-thirds full. in small bowl, stir together sugar and cinnamon;
mix well. Sprinkle over batter in cups
Bake in preheated oven until light golden brown, 15-20 min.
Cool 5 min.; remove from pan.
