Orange-Coconut Cream

1 (3 oz) pkg. orange-flavored gelatin
1 c. boiling water
Grated rind of 1 orange
1 c. orange juice
2 tsp. lemon juice
1 c. whipping cream
1/3 c. sugar
1/2 c. flaked coconut
Additional whipped cream (optional)
Orange slices (optional)

Dissolve gelatin in boiling water.
Stir in orange ring, orange juice and lemon juice.
Chill until consistency of unbeaten egg white.

Beat 1 c. whipping cream until foamy;
gradually add sugar, beating until stiff.
Fold sweetened whipped cream and coconut into gelatin mixture.
Spoon into stemmed glasses, and chill until firm.
Garnish with additional whipped cream and orange slices, if desired.
Yield: 6-8 servings.
