Orange Cranberry Coffeecake

2 c. buttermilk baking mix
1/2 c. milk
2 tbs. PLUS 1/2 c. sugar, divided
2 tbs. vegetable oil
2 tsp. PLUS 1 tbs. grated orange peel, divided
1 egg
1 tbs. margarine, melted
Preheat oven to 375F.
Grease a 9x9" square pan; set aside.
In a bowl, stir together baking mix, milk,
2 tbs. sugar, oil, 2 tsp. orange peel and egg;
beat vigorously 30 seconds.
Gently stir in cranberries.
Spread batter in prepared pan.
In another bowl, mix remaining sugar,
remaining orange peel and margarine;
sprinkle evenly over batter.
Bake in preheated oven until golden brown,
20-25 min. Serve warm. Serves 9.
