Orange Pecan Waffles


1 1/4 c. Flour
2 tsp. Baking Powder
1 dash Salt
3 tbs. Sugar
6 tbs. Oil
1 large Egg
1 1/4 c. Milk
1/4 c. Pecans, chpd.
3 tbs. Orange Peel

Blend oil, egg, milk in blender. Add dry ingredients next.
Last add pecans and orange peel.
Bake as you would any waffle in the waffle iron.

Process first 4 ingredients in a blender until smooth,
stopping to scrape down sides.
Pour mixture through a wire mesh strainer into a pitcher,
discarding solids.
Serve over ice; garnish, if desired.
Yield: 5 cups.
