3 c. all purpose flour
1 1/2 c. coarsley chopped pecans
1 1/4 c. sugar
5 tsp. baking powder
1 1/2 tsp. salt
grated peel of 1 large orange
3 eggs
1 1/2 c. milk
1/3 c. salad oil
Early in Day: Preheat 350F oven.
Grease 9x5" loaf pan. In large bowl,
with fork, mix first 6 ingredients.
In medium bowl, with fork, beat eggs slightly;
stir in milk and salad oil; stir into flour mixture
just until flour is moistened.
Pour batter evenly into pan.
Bake 1 hour and 20 min. until
bread pulls away from sides of pan.
Cool in pan on wire rack 15 min.;
remove from pan and cool completely
on rack. Makes 1 loaf.
